Winemaking in Mont View
Where Great Wines Begin
Nestled beneath the spectacular Brokenback Ranges, the Mount View wine region is one of the Hunter Valley's hidden gems, located just two hours north of Sydney. Renowned for its breathtaking scenery and unique combination of rich volcanic soils, elevated vineyards and favourable microclimate, Mount View produces wines of exceptional purity, flavour and regional character.
Viticulture has been part of the Mount View landscape since the 1860s, with today's vineyards continuing a proud tradition of premium wine production. Positioned between 100 and 200 metres above sea level, the vineyards benefit from cooling mountain influences that help preserve natural acidity and develop vibrant fruit expression. The region's distinctive red soils, warm summers and seasonal rainfall combine to create ideal conditions for growing elegant Semillon, Chardonnay and Shiraz with remarkable depth and complexity.
The surrounding landscape is equally distinctive. Compared with many other parts of the Hunter Valley, Mount View is greener, more secluded and richly vegetated, creating an environment where vineyards thrive amongst rolling hills, native bushland and abundant wildlife. It is a place where nature and viticulture exist in harmony, producing wines that genuinely reflect their origins.
Today, Mount View is home to a small group of highly regarded boutique wineries, each committed to limited production and uncompromising quality. It is this dedication to craftsmanship, together with the region's remarkable terroir, that has earned Mount View a reputation for producing some of the Hunter Valley's finest wines.
Winemaking at Montvalley
Traditional Winemaking, Modern Craftsmanship
At Montvalley, every bottle begins in the vineyard. While modern technology helps us care for the vines and monitor every stage of production, we remain firmly committed to traditional winemaking principles—allowing exceptional fruit, careful craftsmanship and patience to shape every wine we produce.
The Vineyard
Nestled beneath the Brokenback Ranges, Montvalley enjoys a unique combination of rich red soils, an easterly aspect, cooling afternoon breezes and protection from frost and harsh afternoon sun. Together, these natural advantages create ideal conditions for producing premium Hunter Valley fruit with remarkable flavour, balance and varietal character.
Throughout the growing season, every block is carefully monitored to ensure the vines remain healthy and the fruit develops to its full potential. Modern irrigation systems complement nature, providing just the right amount of water when required while allowing the vineyard to express the distinctive character of each vintage.
Harvest
Montvalley's elevated location gives the vineyard its own microclimate, with harvest often commencing several weeks later than many other Hunter Valley vineyards. Rather than harvesting to a calendar date, each variety is picked only when it has reached optimum flavour and balance.
Fruit is carefully harvested and transported the short distance from vineyard to winery, where it is sorted before winemaking begins. This careful selection ensures that only the highest quality fruit is used in every Montvalley wine.
Our Winemaking Philosophy
Every variety is crafted to showcase its individual character while faithfully reflecting the unique terroir of Mount View. Gentle handling, restrained winemaking and careful maturation allow the fruit to remain the hero of every bottle.
Semillon
Our Semillon is crafted using only free-run juice to preserve purity, elegance and freshness. Fermented in stainless steel and matured on lees for added texture, it captures the vibrant citrus character and remarkable ageing potential for which Hunter Valley Semillon is renowned.
Chardonnay
Our Chardonnay balances freshness with complexity. Selected parcels are fermented in both stainless steel and French oak before being carefully blended to create a wine with vibrant fruit, subtle oak influence, creamy texture and exceptional balance.
Shiraz
Our Shiraz is hand crafted using traditional open fermentation techniques with regular plunging to gently extract colour, flavour and fine tannins. Matured in French oak for up to sixteen months, it delivers depth, elegance and the distinctive regional character that has become a hallmark of Montvalley's flagship red.
Rosé
Crafted from selected Shiraz fruit, our Rosé spends only a short time on skins to achieve its delicate salmon colour and vibrant flavour. Cool fermented and matured in stainless steel, it is crisp, refreshing and beautifully balanced—perfect for relaxed afternoons and shared celebrations.
At Montvalley, every vintage is different, and every wine tells the story of its season. Our role is simply to nurture the fruit, respect the vineyard and allow nature to shine through in every bottle.
Our Winemaker
Daniel Binet
Born on the island of Efate, Vanuatu, Daniel Binet moved to Australia with his family in the early 1980s. Inspired by his French heritage and a passion for winemaking, he travelled to Europe after finishing school to gain valuable international vintage experience before returning to Australia to pursue his winemaking career.
Today, Daniel is recognised as one of the Hunter Valley's most respected winemakers, with more than two decades of experience producing premium wines across a wide range of varieties and styles. Since joining Montvalley in 2013, he has worked closely with John and Deirdre to refine the vineyard's winemaking philosophy, crafting elegant wines that faithfully express the character of both the vineyard and each individual vintage.
In addition to his work at Montvalley, Daniel is an accomplished senior wine show judge, contributing his expertise to regional, national and international wine competitions. He is also the Winemaker and Director behind Ballabourneen Wine Co. and his family label, Domaine de Binet, reflecting a lifelong commitment to excellence in Australian winemaking.
